
Gin is a clear alcoholic sprit flavoured with juniper berries. Different regions of the world have different legal definitions, but that’s basically it.
As long as your spirit is flavoured with juniper berries - even slightly - it is technically gin. Similarly, if you put in every other common gin ingredient but skip the juniper, whatever you have made is not gin.
We at Gin Craft embrace adventure and fully support experimenting with juniperless spirits. Creations we've tasted have run the gamut from amazing (a spicy little blueberry-based number), to flat-out terrible (a hop-based distillation that turned out kind of oily).
